Midwest Culinary Institute (MCI) Manager, Central Receiving Operations


The Central Receiving Operations Manager is responsible for distribution and logistical support for culinary operations of the Midwest Culinary Institute (MCI) including instructional programs, Creations community classes, business enterprises, special events and activities. The Manager also provides support, training and leadership to the part-time MCI Associate workers and co-op students employed in the MCI central receiving area.

Essential Duties:

Oversees proper receipt and handling of purchased perishable and non-perishable goods.

Review academic schedules, order guides, and requisitions (picking lists) to ensure appropriate food product and supplies are delivered to instructional classes and business enterprises in a timely and accurate manner.

Maintains and improves the processes relevant to the receiving, storage, distribution and reclamation of food products, supplies, and equipment by utilizing continuous process improvement tools (i.e. Six Sigma) such as process mapping, checklists, gap analysis and Failure Modes and Effects analysis etc. Receives and resolves complaints from chefs or guests relevant to logistical, distribution and equipment issues. Redirects other complaints to responsible team members. Is a team player and demonstrates creative problem solving solutions and a commitment to a continuous quality improvement when dealing with internal contacts and external guests.

Assists in preparation of weekly, quarterly, or annual cost analysis as requested by the Associate Dean/Executive Chef or other administration. Maintains records to assure budget compliance and integrity. Within scope of job responsibilities, helps ensure that corrective actions are taken so that budget goals are attained.

Executes maintenance and sanitation plans and follows established guidelines as outlined the City Health Department, ACF Accreditation body, Cincinnati State Technical and Community College and the Midwest Culinary Institute.

Maintains accurate inventory of supplies and small wares in instructional lab kitchens and store rooms. Reconciles and replenishes pars of instructional lab small ware equipment on a frequent basis (currently beginning of every term). Manage, report and deter shrinkage.

Maintains organization and cleanliness of all food, beverage and equipment storerooms by using industry standard strategies and practices.

Authorized to initiate work orders especially in instances when immediate response is important to preserve operational continuity.

Work collaboratively with MCI personnel to achieve seamless coordination between purchasing and receiving of goods.

Conduct guest tours of the Midwest Culinary Institute and support special activities and functions as directed.

Work collaboratively with MCI Sales and Events Manager, MCI Sous Chefs and Associate Dean/Executive Chef in the scheduling of staff and logistical support necessary to execute all non-credit courses (i.e. Creations Cooking Classes) as well as specified activities, special events and functions.

Works collaboratively with Faculty chef instructors to preserve equipment and maintain acceptable facility sanitation standards. Reports instances of facility and/or equipment abuse, misuse, neglect as well as improper sanitation practices to Academic Program Chair or Associate Dean/Executive Chef.

Responsible to hire train and supervise non-instructional staff, MCI Associate workers and co-op students assigned to the MCI Central Receiving Operation. Complete Co-op evaluation forms and communicate all documented disciplinary issues to the Co-op Coordinator and Associate Dean/Executive Chef.

Attend all weekly staff event-planning meetings and other meetings as directed by Associate Dean/Executive Chef.

Assist the Associate Dean/Executive Chef in preparation of the budget for culinary operations.

Competent to perform routine functions on the Core Tec food management system.

Serve on committees, taskforces, and teams assigned by the Administration.

Minimum Requirements:

Associate degree in culinary arts.

Combination of five years of experience in food service management and/or culinary arts and management.

Strong proficiency using business application software including spreadsheets.

Strong oral and written communication, and presentation skills.
